Our Approach at Ikan

At Ikan, our love and respect for the sea shine through every dish. Our menu draws inspiration from Mexico’s Pacific coast, highlighting fresh, locally sourced ingredients that honor our Nayarit roots while embracing an innovative and sustainable approach.

We work closely with local fishermen who use line-caught methods and techniques like Ike Jime, ensuring the highest quality, freshest seafood. We also partner with nearby farmers to source seasonal vegetables, reducing our carbon footprint while supporting local agriculture.

At Ikan, we believe in sustainable Pacific cuisine: the sea and mountains are within our reach, allowing us to offer ingredients at their freshest. Our restaurant operates with zero waste, utilizing every part of each ingredient and animal protein, and we generate our own electricity through solar energy.

For us, sustainability isn’t a trend—it’s a responsibility. Every dish tells a story of respect for origins, mindful resource use, and commitment to a responsible future.

Top notch food. Black octopus ceviche was fresh from lime and tendrils of cilantro, and textures were perfect. A good sized starter for two. The suckling pig main course was split by two of us, also a perfect piece of pork with amazing mole. Make it into the perfect little tacos. In hindsight I would have skipped the dessert guava tart. The white chocolate miso in the tart was great but somehow the whole package of the tart was not as good as I hoped for after the other two wonderful courses.
